Instructions:

  • Preheat the oven to 163 degrees C.
  • Line a loaf pan with parchment paper (pan size: 23×13 cm).
  • Take large bowl and beat butter and erythritol together until fluffy.
  • Beat in the eggs, lemon zest, lemon juice, vanilla extract.
  • Beat in the baking powder, sea salt and almond flour.
  • Wrap the grated zucchini with cheesecloth.
  • To release as much moisture as possible squeeze over the sink.
  • Stir the grated zucchini into the bowl, and mix very well.
  • Fold the blueberries into the batter.
  • Transfer the batter to the prepared pan.
  • Bake until an inserted toothpick comes out clean (60-70 minutes).
  • Cool completely in the pan.
